When we decided to add salsa verde to our menu, we started by searching for the perfect tomatillo. Then we searched. And searched. And searched. Tomatillos can be very inconsistent in flavor, ranging from sour to mild and sweet. But when the flavor is perfect, tomatillos add a sweet and unique taste. It took us seven years to find the one we liked best. But it was worth the wait.
